Food for Fighters: Baked Coconut Chicken Strips

Last night's dinner was Baked Coconut Chicken Strips with a Greek Salad and Some Beets on the Side.

The chicken strips are delicious, easy to make, and are low enough in carbohydrates to substitute it into your system without doing a math circus (you know, like if you tried to substitute pre-made store bought chicken strips in). If you're interested in giving these a shot, here's what to do:

Preheat the oven to 350 degrees. Season chicken evenly with salt, pepper, and paprika. Add the egg and water to a mixing bowl, whisk together well and set aside. Mix the breadcrumbs and coconut together in a separate mixing bowl and set aside. Dip the chicken in the egg and toss until coated completely. Remove and allow excess to drip off for 1 to 2 seconds and then place directly into the breadcrumbs/coconut mixture. Roll until nicely coated. Lightly coat a baking sheet with spray or aluminum foil and place the strips onto the tray and then into the oven. Bake until golden brown or cooked through (about 15mins). You can remove the largest strip and cut it in half to check if it's done or not.

Here's what you'll need:

  1. Boneless, skinless chicken breast cut into 1/2" strips: 6oz
  2. Salt: 2 pinches
  3. Pepper: 1 pinch
  4. Paprika: 1 pinch
  5. Organic (or) Omega-3 egg: 1
  6. Water: 2 tbsp
  7. Coarse whole wheat breadcrumbs: 1/4 cup
  8. Grated coconut: 1/4 cup
  9. Olive oil cooking spray

Serves 1 large or 2 small:

1 large serving contains
Protein: 47g
Carb: 20g
Fat: 14g

That's how it's done for the Baked Coconut Chicken Strips, and the beets and salad, well, that's pretty straight forward.
